So in our house we’ve been struggling to find variety in our rushed morning breakfasts and nightly packed lunches. The boys are incredibly picky, but picky in opposite ways. Whereas Jeremy would be the first to clear a fruit and veggie tray (especially if you don’t force him to eat meat), Jace is a carnivore who is happy to pass the fruit for meats and dairy. How do we create a better balance?! Well–it’s a work in progress. But I will say this morning’s attempt was a sure success. Maybe that has something to do with the fact that I labeled it “ice cream,” even though it definitely wasn’t!
Here’s the recipe:
1 medium banana, peeled
1 1/2 cups cut-up fresh fruit (I used strawberries)
1 6-8 0z carton vanilla low-fat yogurt
3/4 cup milk
Dump in the blender and BZZZZZZZZZZUHHHHHHH away!
Serve in a glass with a curly straw (only if you want to win the Mom of the Year Award).
Don’t forget–tell them this is ICE CREAM. They don’t NEED to know it’s healthy!
